One thing that I always have ready in the fridge is homemade pesto. It is seriously versatile! I use it on pizzas, pastas, toast, in Buddha bowls. Basically whatever I can think of.
The best thing about this pesto is that it's SO easy to make. Just a couple of ingredients, blend and you're done!
2 handfuls fresh basil
1/2 c olive or avocado oil
1/2 c walnuts
1/4 c nutritional yeast
2 cloves garlic
Just throw everything into a blender or food processor and blend until smooth, adding oil if needed. That's it!
This pesto is full of incredible flavours and I love how simple it is.
