As kids, my sister and I would buy store bought cookie dough and eat the stuff straight out of the tube with a spoon. As delicious as it was back then, the thought of eating raw eggs now really grosses me out. Luckily, these ah-maze-ing chocolate chip cookie dough bars are completely vegan and barely take any effort to make.
Here's what you'll need:
2 1/2 cups flour
2/3 cup organic sugar
2/3 cup organic brown sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2/3 cup melted vegan butter
1/2 cup nut milk ( I used unsweetened vanilla almond milk)
1 tsp vanilla
1 cup vegan chocolate chunks or chips
1/4 c coconut oil
1 c vegan chocolate chips
To make the cookie dough:
Mix dry ingredients in a bowl, stir in melted butter, nut milk and vanilla. stir in chocolate chips.
Line a baking pan with parchment paper and spoon in cookie dough, spread evenly and freeze for 1 hour.
To make the chocolate layer:
Now that the cookie dough is firm, it's time for the chocolate layer.
Add 1 cup of chocolate chips and 1/4 cup of coconut oil in a microwave safe dish and microwave in 30 second intervals stirring after each.
When the chocolate is melted, pour over the cookie dough. Give the pan a little shake to make sure the chocolate mixture is spread evenly.
Put back in freezer for 20 minutes, until chocolate is solid.
Remove from freezer and cut into squares. store in fridge.
Dig in! These bars are HIGHLY addictive. Proceed with caution!
