Perfect Banana Bread (vegan & sugar-free too!)

Hi Friends!

I've been working on this banana bread recipe all week trying to perfect it and I finally did it! It took 37 bananas but I've come up with a recipe that is both vegan and free of sugar and the result is really, well, perfect!

Here's what you'll need:

2 cups flour

1 tsp baking soda

1 tsp salt

1 tsp vanilla extract

1 cup dates

4 bananas

1/2 cup unsweetened apple sauce

1/2 cup melted vegan butter or coconut oil

1/2 cup non-dairy milk (I used almond milk)


1. Add dates, almond milk, apple sauce, butter, vanilla extract and bananas to a food processor and blend on high until smooth.

2. Stir in flour, baking soda and salt. Mix in walnuts.

4. Bake at 350F for 75 minutes. Let cool and serve!

I substituted the walnuts for dark chocolate chips to make some muffins for the kids. This version isn't sugar-free because of the chocolate but I feel much better knowing that this is still a much healthier option than a muffin filled with sugar. For the muffins, bake at 350F for 30 minutes.
