Vegan Apple Crisp

Happy September, friends!

As much as I love summer (and I really do love summer!), there is nothing like the crisp chill of autumn coming around the corner.

This time of year is meant for skinny jeans, flannel, cute boots, pumpkin spice and of course, apple picking!

My oldest childhood friend, Natasha, recently visited Chudleigh's Farm in Halton Hills, Ontario and had a fantastic time. Head on over to her blog post Why You Need To Visit Chudleigh's Apple Farm This Autumn to see all of the fun things she did while she was there.

While youre over there, take a look around her website, And Then I Met Yoko . Tash has the most amazing travel blog, she is a truly gifted photographer and she inspires me to travel through her photography and experiences!

Now that you've got an overwhelming amount of apples from all of that apple picking, you're going to probably want to do  something with them.

One my favourite things to do with the reapings of a good apple picking is the oh-so-delicious and ever-so-simple Apple Crisp! Just a few ingredients and you've got yourself the warmest, most soul comforting dessert you could ask for this time of year.

Here's what you'll need:

8 medium apples

1/2 cup sugar

1 Tbsp flour

1/2 tsp cinnamon

1 cup quick oats

1 cup flour

1 cup brown sugar

1/2 cup vegan butter (melted)

1 tsp cinnamon

1 tsp baking powder

To make the apple base:

1. Peel and slice apples into wedges.

2. Combine peeled apples, 1/2 tsp cinnamon, 1 Tbsp flour and sugar in a bowl and mix until all apples are coated evenly.

To make the crumble:

1. Mix flour, oats, brown sugar, cinnamon and baking powder in a bowl.

2. slowly stir in melted butter until mixture becomes crumbly.

Final steps:

1. Preheat oven to 350.

2. Pour apple mixture into an 8x8" greased baking dish.

3. Crumble topping evenly over apples.

4. Bake at 350 for 30-35 minutes.

Serve with your favourite dairy free ice cream (I used Ben & Jerry's Coconut Almond Fudge Chip) and enjoy!
