Best Homemade Falafel

Oh, hi there! Today I'm sharing one of my favourite things to make. Falafel! Falafel is one of the best things to have available in the fridge, I like to make big batches and use them in everything from pita wraps to buddha bowls.

These guys are super easy to make and require very little prep.

Here's what you'll need:

2 cups dried chickpeas, soaked overnight*

1 tsp cumin

1 tsp coriander

3 cloves garlic

1 white onion

1 cup fresh cilantro

1 cup fresh parsley

zest of 1 lemon

1 tsp salt

oil for frying

*Don't use the canned chickpeas that have already been cooked, they're too soft and will melt in the frying oil.

Here's what I did:

1. Toast cumin and coriander in a skillet, shaking frequently.

2. Place the drained chickpeas, cumin, coriander, garlic, onion, cilantro, parsley, salt and lemon zest into a food processor. Pulse until finely blended but not pureed.

3. Roll the mixture into balls with your hands and set aside.

4. Pour enough oil into a pan to cover half of the falafel. Heat element to mid-high heat.

5. Fry in batches, flip carefully every 2-3 minutes until golden-brown.

6. Remove from oil and place falafel on paper towel to absorb any extra oil.

7. Enjoy!
